  • 2 medium sweet potatoes, peeled & diced (about 3 cups)

  • 1 ยฝ cups dry brown or green lentils, rinsed

  • 1 small onion, chopped

  • 3 garlic cloves, minced

  • (Optional) 1 bell pepper, diced

  • 3 cups vegetable broth (or enough to cover)

  • 3 tbsp BBQ sauce (plus more to taste)

  • 1 tbsp chili powder

  • 1 tsp smoked paprika

  • 1 tsp cumin

  • ยฝ tsp oregano

  • ยฝ tsp salt, plus more to taste

  • ยผ tsp black pepper

  • Optional: pinch of chipotle powder or cinnamon

  • Juice of 1 lime, added at the end

  1. Add to slow cooker: Combine sweet potatoes, lentils, onion, garlic, spices, BBQ sauce, and broth. Stir to mix.

  2. Cook:

    • On HIGH for 3 hours, or

    • On LOW for 6 hours, until lentils and potatoes are soft and mixture is thickened.

  3. Finish: Stir in lime juice and adjust seasoning โ€” add more BBQ sauce or salt to taste.

  4. Serve: Spoon into warm tortillas and top with your favorites!
