This recipe combines creamy pumpkin sauce with warm spices, hearty pasta, and crunchy sage breadcrumbs that bring the perfect finishing touch. Itβs weeknight-friendly (ready in 20 minutes!) but tastes special enough for entertaining.

For the pasta:
π 12 oz Brami pasta (rigatoni or penne)

π₯₯ Β½ cup coconut milk (unsweetened) or oat cream
π₯£ Β½ cup vegetable broth

For the sage breadcrumbs:
π 1 cup fresh breadcrumbs (or panko)
πΏ 2 tbsp olive oil
π± 2β3 fresh sage leaves, finely chopped (or Β½ tsp dried)

Make the breadcrumbs
β Heat olive oil in a skillet over medium.
β Add breadcrumbs, chopped sage, and salt.
β Toast until golden + fragrant. Set aside.Build the sauce
β In the same pan, sautΓ© shallot + garlic until soft.
β Stir in pumpkin purΓ©e, coconut milk, broth, nutmeg, paprika, salt + pepper.
β Simmer 5 minutes until creamy.Cook the pasta
β Boil Brami pasta until al dente. Reserve Β½ cup pasta water.
β Toss pasta with sauce, adding pasta water as needed to coat.Assemble + serve
β Divide pasta into bowls.
β Top with sage breadcrumbs + optional vegan parmesan, toasted walnuts, or pumpkin seeds.
