This Summer Orzo Salad was a star at our โ€˜Sconset picnic, and itโ€™s quickly become one of my go-to dishes for gatherings. Sweet corn, juicy Bartlettโ€™s tomatoes, and fragrant basil come together with tender orzo and a drizzle of good olive oil for a salad thatโ€™s fresh, simple, and absolutely crowd-pleasing.

  • 1 ยฝ cups orzo pasta

  • 2 cups fresh corn kernels (about 3 ears), lightly cooked or grilled

  • 2 cups cherry tomatoes, halved

  • 1 cup fresh basil leaves, torn

  • ยผ cup extra virgin olive oil (Graza or Brightland)

  • Juice of 1 lemon (about 2 tbsp)

  • Sea salt + cracked black pepper, to taste
