The Easiest Dessert for Busy Weekends
Soccer weekends are always a whirlwind β games, snacks, carpools, and somehow the kids still ask for dessert at the end of the day. This skillet cookie is my go-to because itβs ridiculously simple, takes just one bowl, and comes out soft, gooey, and melty in under 30 minutes. Think: a giant chocolate chip cookie baked into a cozy skillet β perfect for sharing, but no judgment if you grab your own fork.
I love using Enjoy Life vegan chocolate chips here. Theyβre free from the top allergens, so everyone can dig in without worry, and they melt beautifully into those gooey puddles you want in every bite.
Ingredients
1 Β½ cups almond flour (or oat flour for nut-free)
ΒΌ cup coconut sugar (or brown sugar)
3 tbsp maple syrup
3 tbsp nut butter (peanut, almond, or cashew)
2 tbsp melted coconut oil (or vegan butter)
1 tsp vanilla extract
Β½ tsp baking soda
Pinch of sea salt
Β½ cup Enjoy Life vegan chocolate chips
Instructions
Preheat oven to 350Β°F (175Β°C). Lightly grease a small cast-iron skillet or 8x8 baking dish.
In a bowl, whisk together almond flour, coconut sugar, baking soda, and salt.
Stir in maple syrup, nut butter, melted coconut oil, and vanilla until a dough forms.
Fold in the Enjoy Life chocolate chips.
Press dough evenly into the skillet.
Bake for 18β22 minutes, until golden at the edges but soft and gooey in the center.
Let cool for 5 minutes, then serve warm with forks (and a scoop of vegan ice cream if you like β¨).

Add a sprinkle of flaky sea salt before baking for that bakery-style finish.
