๐Ÿช Vegan Chocolate Chip Skillet Cookie

The Easiest Dessert for Busy Weekends

Ingredients

  • 1 ยฝ cups almond flour (or oat flour for nut-free)

  • ยผ cup coconut sugar (or brown sugar)

  • 3 tbsp maple syrup

  • 3 tbsp nut butter (peanut, almond, or cashew)

  • 2 tbsp melted coconut oil (or vegan butter)

  • 1 tsp vanilla extract

  • ยฝ tsp baking soda

  • Pinch of sea salt

  • ยฝ cup Enjoy Life vegan chocolate chips

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Lightly grease a small cast-iron skillet or 8x8 baking dish.

  2. In a bowl, whisk together almond flour, coconut sugar, baking soda, and salt.

  3. Stir in maple syrup, nut butter, melted coconut oil, and vanilla until a dough forms.

  4. Fold in the Enjoy Life chocolate chips.

  5. Press dough evenly into the skillet.

  6. Bake for 18โ€“22 minutes, until golden at the edges but soft and gooey in the center.

  7. Let cool for 5 minutes, then serve warm with forks (and a scoop of vegan ice cream if you like โœจ).
