For the Tofu + Veggies:
1 block extra-firm tofu (14 oz), pressed & cubed
2 tbsp cornstarch (or arrowroot powder for gluten-free)
2 tbsp olive oil (Graza or Brightland)
2 cups broccoli florets, lightly steamed or sautΓ©ed
2 packs Palmini rice, drained + rinsed well
For the Orange Sesame Sauce:
Β½ cup orange juice (fresh if possible)
Zest of Β½ an orange
2 tbsp apple cider vinegar (or white vinegar)
2 tbsp maple syrup or brown sugar
1 tbsp ketchup (for depth + color)
1 clove garlic, minced
1 tsp fresh ginger, grated (or Β½ tsp ground)
1 tsp toasted sesame oil (stir in at the end)
1 tbsp cornstarch + 2 tbsp water (slurry, to thicken)
Pinch of salt
To Garnish:
Sesame seeds
Scallions, sliced thin

Crisp the tofu: Pat the tofu dry, cut into cubes, and toss in cornstarch. Heat olive oil in a skillet and pan-fry until golden + crispy on all sides (7β8 minutes). Set aside.
Make the sauce: In a small saucepan, whisk orange juice, zest, apple cider vinegar, maple syrup, ketchup, garlic, and ginger. Simmer for 3β4 minutes. Stir in the cornstarch slurry and cook until thickened + glossy. Remove from heat and stir in sesame oil.
Prep broccoli: Steam or sautΓ© broccoli until bright green and tender-crisp.
Warm Palmini rice: Rinse well, then heat in a skillet with a drizzle of olive oil and a pinch of salt until warmed through.
Assemble bowls: Toss the crispy tofu in the orange sesame sauce until coated. Serve over Palmini rice with broccoli on the side. Garnish with sesame seeds + scallions.
