Homemade Tortillas (So Easy, So Good)

There’s something so comforting about a warm tortilla straight off the skillet. Soft, fluffy, and just the right amount of chew — once you try making them at home, it’s almost impossible to go back to store-bought.

These tortillas aren’t groundbreaking (they’re naturally vegan, after all), but they are simple, cozy, and endlessly versatile. Perfect for tacos, quesadillas, wraps, or just tearing into and dipping with hummus, soup, or salsa. I love adding a handful of fresh herbs to the dough — cilantro, parsley, or even rosemary — to make them feel extra garden-fresh.

Ingredients 🫓

  • 2 cups all-purpose flour (or sub whole wheat or half & half)

  • ½ tsp salt

  • ¾ cup warm water

  • 3 tbsp olive oil (I use Brightland)

  • Optional: 2–3 tbsp chopped fresh herbs (cilantro, parsley, chives, rosemary)

Instructions ✨

  1. In a medium bowl, whisk together flour and salt.

  2. Add warm water and olive oil. Stir until a dough forms.

  3. Knead on a lightly floured surface for about 5 minutes, until smooth. Cover and let rest for 30 minutes.

  4. Divide the dough into 8 equal pieces. Roll each into a ball, then roll out thin circles with a rolling pin.

  5. Heat a skillet or cast-iron pan over medium-high. Cook each tortilla for ~1 minute per side, until golden spots appear and they puff slightly.

  6. Stack cooked tortillas in a clean kitchen towel to keep warm and soft.

Serving Ideas 🌿

  • Fill with beans, veggies, and avocado for quick tacos

  • Layer with melty vegan cheese for quesadillas

  • Wrap around your favorite fillings for a cozy lunch wrap

  • Tear into pieces and dip into hummus, soup, or chili

  • Or… just enjoy one warm from the pan — my personal favorite!
