No-Bake Peanut Butter Energy Bites (Vegan + Meal Prep-Friendly)

You know those snacks that feel like a treat but still leave you feeling good afterward? These are those. These no-bake peanut butter energy bites are my go-to when I want something sweet, satisfying, and secretly nourishing.

They’re made with pantry staples, take five minutes to mix up, and store beautifully in the fridge. I love having a batch ready to go for mid-day munchies, post-dinner treats, or tossing into lunchboxes. And the best part? They’re endlessly customizable.

✨Ingredients

  • 1 cup rolled oats

  • ½ cup natural peanut butter

  • ¼ cup agave or maple syrup

  • 1 tbsp ground flaxseed

  • ½ tsp cinnamon

  • ⅓ cup mini chocolate chips (I use Enjoy Life)

  • 1 tsp vanilla extract

  • Pinch of salt

🥄Instructions

  1. In a bowl, stir together oats, flaxseed, cinnamon, and salt.

  2. Add peanut butter and agave. Mix until well combined.

  3. Fold in chocolate chips.

  4. Roll into bite-sized balls.

  5. Chill for 20–30 minutes to firm up.

Store in an airtight container in the fridge for up to a week—or freeze for later!
