Summer in a Bowl

This bowl is everything I want to eat in the summer—juicy tomatoes, crunchy cucumbers, tender chickpeas, and hearty farro. It’s bright, fresh, and endlessly satisfying, with a simple lemon-olive oil dressing that brings it all together.

🛒Ingredients

🌿For the bowl:

  • 1 cup cooked farro (or quinoa for gluten-free)

  • 1 cup canned chickpeas, drained and rinsed

  • 1 cup cherry tomatoes, halved

  • 1 cup diced cucumber

  • ¼ cup chopped red onion or scallions

  • ¼ cup chopped parsley

  • ¼ cup chopped mint

  • Juice of 1 lemon

  • 2 tbsp olive oil

  • Salt and pepper to taste

For the Lemon Garlic Dressing:

  • 2 tbsp olive oil

  • Juice of 1 lemon

  • 1 garlic clove, minced

  • 1 tsp Dijon mustard

  • 1 tbsp maple syrup or agave

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine farro, chickpeas, tomatoes, cucumber, red onion, parsley and mint.

  2. Drizzle with lemon garlic dressing.

  3. Season with salt and pepper, then toss to combine.

Serve chilled or at room temperature—ideal for meal prep, picnics, or lunch on a sunny porch. It’s fresh, feel-good food that tastes like summer.
