๐ Butternut Squash & Shallot Pizza

I made this in Nantucket for appetizer night with friends โ and it was one of those dishes that disappeared fast. Butternut squash and caramelized shallots with creamy vegan fetaโฆ itโs sweet, savory, cozy, and somehow feels both effortless and special at the same time.
Now Iโll be making this on repeat.

Itโs the perfect seasonal bite: thin roasted squash, soft tangled shallots, and warm crust that holds everything together. Optional balsamic at the end for a little brightness.
Ingredients
For the pizza:
1 ball pizza dough (store-bought or homemade)
ยฝ small butternut squash, peeled + thinly sliced
2 shallots, thinly sliced
โ โยฝ cup vegan feta (Follow Your Heart / Violife)
Olive oil
1 clove garlic, minced
Salt + black pepper
Optional: balsamic glaze for finishing
Instructions
Preheat oven to 425ยฐF.
Toss squash + shallots in olive oil, salt, and pepper. Roast 15โ20 mins.
Roll out the dough. Brush with olive oil + scatter minced garlic.
Layer squash + shallots over dough. Crumble feta on top.
Bake 12โ15 mins or until golden + crisp.
Optional: drizzle balsamic before serving.
Notes
Slice squash thin for even roasting.
Cube it instead if thatโs easier โ still delicious.
Toast leftovers in a skillet to re-crisp.
