๐ Cozy Apple Crumbles (Fall-Inspired + Vegan)
Apple picking in New England is always a favorite fall activity โ the crisp air, the farm orchards, the bags of fresh-picked apples that beg to be baked into something cozy. These apple crumbles are my go-to way to bring that seasonal magic home.
Theyโre warm, golden, and spiced just right โ the perfect sweet treat for a chilly evening. And since Conrad is allergic to peaches ๐, I swapped my summer peach crumbles for apples to make this recipe fall-friendly (and season-finale approved!).
โจ Ingredients
(Serves 4โ6 individual crumbles)
For the filling:
5โ6 medium apples (Honeycrisp or Gala), peeled and diced
2 tbsp maple syrup
1 tbsp lemon juice
1 tsp cinnamon
ยฝ tsp nutmeg
1 tsp vanilla extract
1 tbsp cornstarch (or arrowroot powder)
For the crumble topping:
1 cup rolled oats
ยฝ cup almond flour (or oat flour)
ยฝ cup chopped walnuts or pecans (optional)
โ cup coconut sugar (or brown sugar)
ยผ cup coconut oil or vegan butter, melted
Pinch of sea salt

Prep the filling:
In a mixing bowl, toss diced apples with maple syrup, lemon juice, cinnamon, nutmeg, vanilla, and cornstarch until well coated.
Make the crumble topping:
In another bowl, combine oats, almond flour, nuts, coconut sugar, salt, and melted coconut oil. Mix until crumbly.
Assemble:
Divide the apple mixture into ramekins (or use one 8x8 baking dish).
Sprinkle the crumble topping generously over each.
Bake:
Bake at 350ยฐF (175ยฐC) for 30โ35 minutes, until apples are bubbly and topping is golden.
Serve:
Best enjoyed warm with vegan vanilla ice cream or coconut whipped cream.
