2 cups cooked chickpeas (or 1 can, drained & rinsed)
Β½ cup breadcrumbs (GF if needed)
ΒΌ cup finely chopped onion (or shallot)
2 cloves garlic, minced
ΒΌ cup fresh parsley (or basil)
3 tbsp unsweetened plant milk (oat or almond)
2 tbsp tahini or olive oil
2 tbsp nutritional yeast (or cashew parm)
1 tsp dried oregano
1 tsp smoked paprika
Β½ tsp fennel seeds (optional)
Salt & black pepper, to taste
Directions
Pulse mixture: Add chickpeas, breadcrumbs, onion, garlic, parsley, tahini, nutritional yeast, and spices to a food processor. Pulse until combined but still textured.
Add milk: Transfer to a bowl and stir in plant milk until the mixture holds together.
Shape: Roll into ~1 Β½ tbsp balls and place on a parchment-lined sheet.
Bake: Brush with olive oil and bake at 400Β°F for 20β25 minutes, flipping halfway. For crispier bites, pan-sear after baking.
