๐Ingredients
2 cups cooked chickpeas (or 1 can, drained & rinsed)
ยฝ cup breadcrumbs (GF if needed)
ยผ cup finely chopped onion (or shallot)
2 cloves garlic, minced
ยผ cup fresh parsley (or basil)
3 tbsp unsweetened plant milk (oat or almond)
2 tbsp tahini or olive oil
2 tbsp nutritional yeast (or cashew parm)
1 tsp dried oregano
1 tsp smoked paprika
ยฝ tsp fennel seeds (optional)
Salt & black pepper, to taste
Directions
Pulse mixture: Add chickpeas, breadcrumbs, onion, garlic, parsley, tahini, nutritional yeast, and spices to a food processor. Pulse until combined but still textured.
Add milk: Transfer to a bowl and stir in plant milk until the mixture holds together.
Shape: Roll into ~1 ยฝ tbsp balls and place on a parchment-lined sheet.
Bake: Brush with olive oil and bake at 400ยฐF for 20โ25 minutes, flipping halfway. For crispier bites, pan-sear after baking.
Serve: Try them with marinara + pasta, tucked into pita, or on top of a grain + veggie bowl.
