  • 1 tsp dried oregano

  • 1 tsp smoked paprika

  • ยฝ tsp fennel seeds (optional)

  • Salt & black pepper, to taste

Directions

  1. Pulse mixture: Add chickpeas, breadcrumbs, onion, garlic, parsley, tahini, nutritional yeast, and spices to a food processor. Pulse until combined but still textured.

  2. Add milk: Transfer to a bowl and stir in plant milk until the mixture holds together.

  3. Shape: Roll into ~1 ยฝ tbsp balls and place on a parchment-lined sheet.

  4. Bake: Brush with olive oil and bake at 400ยฐF for 20โ€“25 minutes, flipping halfway. For crispier bites, pan-sear after baking.

  5. Serve: Try them with marinara + pasta, tucked into pita, or on top of a grain + veggie bowl.
