Peanut Crunch Noodle Bowl

Crunchy, saucy, and packed with fresh herbs — this is my go-to when I want something fast that still feels special.

Ingredients

  • 1 bag Palmini noodles, rinsed

  • 1 cup carrots, ribboned

  • 1 cucumber, sliced thin

  • 1 cup chickpeas, drained and rinsed

  • Fresh mint, chopped

  • Fresh parsley, chopped

  • Sesame seeds, for topping

Peanut Sauce

  • 1/3 cup peanut butter

  • 2 tbsp tamari

  • Juice of 1 lime

  • 1 tbsp maple syrup

  • 1 tsp sesame oil

  • Water, to thin as needed

Instructions

  1. Whisk together peanut butter, tamari, lime juice, maple syrup, and sesame oil. Add water a tablespoon at a time until pourable.

  2. Rinse and drain Palmini noodles well; pat dry.

  3. Toss noodles with carrot ribbons, cucumber, and chickpeas.

  4. Pour peanut sauce over and toss to coat.

  5. Top with fresh mint, parsley, and sesame seeds.

Crunchy, saucy, and done in under 15 minutes — this is the bowl I make when I want maximum flavor with minimum effort.
